Roasted Pear Crostini

I’ve been so excited to share today’s post with you for several reasons. The first being that these crostini make an incredibly easy appetizer for hosting friends at your house when it’s too unbearably cold to make the effort to go out for happy hour. Second, goat cheese. Third, I may have eaten a whole baguette by way of crostini last week because when carbs look this beautiful, it’s okay to do that sort of thing. And last, the combination of flavors is classic and tasty. And it’s not necessarily a recipe, so you can fudge it a little bit and it will still taste great, which makes it perfect to file in your entertaining arsenal.

If you’ve never had roasted pears, you will be so pleasantly surprised. I love my fruit roasted. Go on and invite your friends over tonight, make these beauties, and come back later to tell me what you think!

Ingredients
1 small loaf crusty bread (or baguette)
2 pears (I used bosc)
6 oz goat cheese
Honey
A few sprigs of thyme

Instructions
Preheat oven to 200 degrees.
Thinly slice the pear, leaving the skin on (about 3-4 slices on either side), discarding the center, stem and seeds.
Lay sliced pears on parchment paper and onto a baking sheet. Lightly brush each slice with honey and sprinkle with a little bit of salt, pepper, and thyme. Bake for 15 minutes.
While you’re waiting for the pears to roast, slice the bread and toast or grill each slice.
Layer each crostini with a quick spread of goat cheese, one pear slice, and a drizzle of honey.
Serve warm and enjoy!
