Pineapple Apple Mint Juice

There are a few reasons I love juicing. One being that it’s fairly hard to screw up. I tend to boycott measuring cups and estimate things when I’m cooking at home. This method doesn’t always work out in my favor, but with juicing you can pretty much make most combinations work within reason (note: do not juice arugula, it combines well with exactly nothing).

I bought my juicer two years ago and I go through phases of using it daily and phases where I allow it to sit in my cabinet and collect dust. Because let’s be honest, those things are a pain in the ass to clean (although, fun tip! Use a toothbrush to get the hard to reach areas – works like a charm).

Mint is one of my very favorite ingredients to use in my juices, it just makes everything taste like summer. And wouldn’t this be the perfect pop of color and freshness to enjoy with your mama over brunch this Mother’s Day?

Pineapple Apple Mint Juice

YIELDS: 2-3 Servings

INGREDIENTS:
1 Pineapple
2 Granny Smith Apples
Handful of fresh mint

INSTRUCTIONS:
Remove the rind from your pineapple and chop all ingredients into pieces small enough to fit into your juicer. It helps the flow of things to follow the softer ingredients (mint and pineapple) with the apples.
Pour over ice and garnish with mint.

NOTES:
Juice may separate over time, stir occasionally to recombine
Additional ingredients you might try: Cucumber, celery, romaine

  • Ooh, this sounds lovely. I've been into juicing + making smoothies lately because it's a good way to get nutrients on the go, in a confined container (ie, I can stuff a bunch of spinach in a smootie and chug it, rather than eating a huge spinach salad).

    I want to try this recipe soon- sounds exactlyyyy like summer! :)
