Effortless Meals: Avocado Toast Two Ways

My younger sister moved in with me for the summer and it’s the first time since college I’ve had a roommate. I’ve had to reassess the amount of stuff I own and that’s been a bit of an adjustment. As in all of my stuff has moved from the second bedroom into messy piles in my bedroom to make space for her stuff.

Other than that, having another person in the house to stay up late with watching New Girl reruns, who encourages me to keep everything I’ve ordered online, and to try new recipes with is a really nice change of pace. We’re having a lot of fun together (or at least I am).


Making meals for myself, more often than not, is a quick task. I have a handful of simple ingredients that I use pretty regularly. Cooking new meals for two people really is the best – no leftovers (yep, that’s a plus in this house) and no ingredients going bad in the fridge waiting to be used again! I still have some simple go-to eats for when we’re not sharing meals and one of my favorites is avocado toast.



There are many people in my life who don’t understand or appreciate the avocado toast. It makes me like them a little less TBH (just kidding, mom). It’s one of my favorite breakfasts/lunches/dinners when I need something quick and filling. There are endless ways to doctor up your avo toast so lack of variety is not an issue. Below are two of the most common ways I like to make mine – one savory and one sweet!

AVOCADO TOAST TWO WAYS

Savory Ingredients
1/4 of an avocado, smashed or sliced
1 piece of gluten free bread (I love Udi’s)
1-2 small radishes, thinly sliced
1 Tbsp feta cheese, crumbled
Sea salt and pepper to taste

Sweet Ingredients
1/4 of an avocado, smashed or sliced
1 piece of gluten free bread (I love Udi’s)
1 small nectarine
Organic honey, drizzled
Handful of walnut pieces
Sea salt to taste

Place your sliced avocado and other ingredients on top of your toasted bread and enjoy. Do you like avocado toast? What are your favorite ingredients to pile on top?
